Magical beans

Beans are the new staple food in our diet. They are full of fiber and protein, are low fat, filling, and take on seasonings very well. It’s probably a good thing we are not all living at home right now, because my poor husband is not overly fond of beans or rice. He is very patient about the new food restrictions when Esther is home—he is just glad to have his “little girl” around again—but when she goes back to school he is openly delighted to get more variety at mealtimes. Actually, the greater emphasis on vegetables and fruits is good for him, and for me, as we get into our late 40’s! Fortunately we all love spicy foods and I have a whole repertoire of chili recipes, all of which are suitable for low-fat, gluten-free, lactose-free diets. Yay! We used to make cornbread or spoonbread of various kinds with it, but now we go with rice, baked potatoes, warm homemade tortilla chips, or hush puppies.
