Perhaps we are finally seeing a light at the end of this tunnel. We are at one month of feeling good…one straight month of good days and energy. When Esther is still awake and active at 10pm, and out with friends I know she is doing well. Last night when I called she was telling me about cooking dinner for her host family—an unforeseen benefit of having to cook for herself is a growing interest in recipes and food. She made them some of her recipes and declared it “fabulous.” I was proud of her and surprised at the unexpected scenery along this journey. After the long darkness of winter it is good to see a flowering bush.

Our very favorite cookbook for food allergies so far is What to Eat When You Can’t Eat Anything, by Chupi and Luke Sweetman. Not that all the recipes are gluten or lactose free, but that they are whole foods, healthy and tasty, and constructed with delicate digestive systems in mind. They also discuss the merits of eating organic and have personal experience written into the text and introducing each recipe– it’s a delightful read, especially if you are fond of cookbooks anyway, as I am.
Tonight we tried the Spicy Chicken Curry, and declared it fabulous, while our sinuses drained completely. Seems strange that spicy foods are not difficult to digest, but many spices are good for the immune system and stimulate appetite, so they are good for people feeling fragile.
