Beef and Broccoli
1 large bunch of broccoli
1 lb. beef tenderloin steaks, trimmed and thinly cut into 1/8 inch strips
3 garlic cloves, crushed
1 Tbsp. grated, peeled fresh ginger
1/4 tsp. crushed red pepper
1 tsp. olive oil or stir fry oil
3/4 cup chicken broth
3 Tbsp. soy sauce
1 Tbsp. cornstarch
1/2 tsp. Asian sesame oil or 1 tsp. sesame seeds
Cut broccoli into 1 1/2 inch pieces. Peel stems and cut into 1/4 inch diagonal slices. In wok or large non-stick skillet, heat 1/2 inch water to boiling over medium high heat. Add broccoli and cook for 3 minutes uncovered. Drain and set aside; wipe skillet dry.
In medium bowl toss beef with garlic, ginger, and crushed red pepper. Add 1/2 tsp. olive oil to wok and heat; add half of beef mixture and cook over medium high heat, stirring quickly and frequently till beef loses its pink color. Transfer to plate and repeat with remaining 1/2 tsp. oil and beef mixture.
Mix broth, soy sauce, cornstarch, and sesame in small bowl. Return cooked beef to skillet, stir in sauce mixture and heat to boiling. Cook 1 minute or till sauce has thickened slightly. Add broccoli and toss to coat. Serve with rice.
