Chicken Sate with Peanut Sauce
The original recipe called for the meat to be threaded onto skewers…it seemed much easier to just grill the strips on their own and serve with the sauce. It is delicious with basmati rice!
Sate:
2 garlic cloves, minced
2 Tbsp. soy sauce
2 tsp. sesame oil
2 tsp. lime juice
1 tsp. ground cumin
1 lb. boneless chicken breast
Cut meat into thin strips and put into bowl. Stir together marinade and pour over. Cover and refrigerate for at least 1 hour and up to 24 hours. Heat grill, remove chicken from marinade and discard remainder. Grill strips a few minutes on each side, till cooked through.
Meanwhile prepare peanut sauce:
1/2 cup natural chunky peanut butter
1/4 cup sliced green onions
2 garlic cloves, minced
1 Tbsp. honey
2 tsp. soy sauce
1 tsp. curry powder
1 tsp. ground coriander
1 cup water
Stir together in saucepan and bring to boil over medium heat. Reduce to low and simmer 3-5 minutes till sauce thickens. Serve with chicken and rice.
