Cuban Beans
2 tsp. olive oil
4 cloves garlic, minced
1 cup water
2 cans black beans, rinsed
1 1/2 tsp. ground cumin
1 tsp. dried oregano
1 tsp. smoked paprika (or regular, if you can’t find the smoked)
1/2 tsp salt (or to taste)
1/4 tsp, fresh ground pepper
1 of each red, green, and yellow pepper, medium onion, sliced (or 1 lb bag frozen pepper stir-fry vegetable blend)
Heat oil in large skillet over meium high heat. Add garlic and cook 30 seconds. Stir in remaining ingredients. Bring to simmer, cover, and reduce heat. Cook 10 minutes till vegetables are crisp-tender and flavors have blended. Serve with rice and hot sauce.
