Endless Chili Variations

When beans are a staple of your diet, you want as many different ways to serve them as possible. Fortunately, there are as many varieties of chili as you could ever want, all of them chock-full of protein and veggies, most of them lowfat, and also gluten and lactose free (as long as you avoid cheese toppings). Our family loves spicy foods, and I have been collecting good chili recipes for years. Now they are coming in handy, the only catch being that I can no longer easily serve them with homemade bread, spoonbread, or corn bread…but the accompaniments will have to wait for another page.
