Turkey Black Bean Chili
1 medium onion, chopped
1 garlic clove, minced
1 lb. ground turkey
4 Tbsp. chili powder
1 tsp. ground cumin
1/2 tsp. freshly ground pepper
1/2 tsp. salt
14 oz. can chicken broth
2 16 oz. cans black beans, one of them drained and rinsed
1 16 oz. can kidney beans
2 14.5 oz. can diced tomatoes (or substitute 1 15 oz. can tomato sauce for one of them, if you like it thicker)
1 16 oz. bag frozen corn
1/4 cup water as needed
Cook onion, garlic, and turkey in a Dutch oven over medium high heat, stirring often, till turkey is cooked through. Add the spices and cook another 5 minutes. Add the chicken broth and stir well to get the browned bits up from the pan. Add the beans, tomatoes, and frozen corn.
Simmer till flavors are blended– I put this into the slow cooker at this point and left it for the rest of the afternoon. Good flavor! Serve with corn chips (cheddar cheese, and sour cream are good too).
