Apple Pecan Pancakes
These are so good– hearty and spicy and homey! This recipe makes 7 large and filling pancakes.
3/4 cup plus 3 Tbsp. gluten-free flour mix
2 1/2 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. mace
1/4 tsp. ginger
1/4 tsp. ground cloves
1 Tbsp. ground flax seed
1 egg
3/4 cup plus 2 Tbsp. soy milk with 1 Tbsp. lemon juice added (Let sit for 5 minutes to thicken. This is taking the place of buttermilk.)
1 1/2 Tbsp. oil
1 tart apple, peeled and grated
1/4 cup chopped pecans
In a large bowl mix dry ingredients. In another bowl mix egg, milk, and oil; stir into dry mixture just till blended. Stir in apple and nuts.
Pour by 1/4 cupful onto greased griddle over medium-low heat. Turn when bubbles form on top and bottom is brown. Cook till second side is golden brown.
