Blueberry Oatmeal
This is the new summertime favorite around here. We started out using frozen berries from last year’s bounty, but the fresh ones are even better.
1 3/4 cup soy milk
1 cup Uncle Bob’s Red Mill Rolled Oats
1/8 tsp. salt
2 Tbsp. brown sugar
1/2 tsp. cinnamon
3/4 blueberries
Bring milk to boil over medium heat, stirring often. Add oats and salt; cook till thickened, stirring occasionally. Stir in brown sugar and cinnamon. Divide between two bowls (or eat it all yourself if you are really hungry!) and top with blueberries.
