Maple, Walnut, and Flaxseed Pancakes
1 cup gluten free flour
1/4 cup ground flaxseed
1/4 cup finely chopped walnuts
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 cups yogurt (if you can handle cultured dairy)*
1/4 cup pure maple syrup
1 large egg
Whisk dry ingredients together in bowl to blend. Whisk yogurt, maple syrup, and egg in another bowl. Add to dry ingredients and whisk just until incorporated. *You can use soy milk if you need to, but add a teaspoon or two of lemon juice to the measuring cup, to give a better texture and taste.
Brush nonstick skillet lightly with oil and heat. Make 4″ pancakes on griddle and cook till golden on both sides.
Serve with more maple syrup and sliced fruit. Bananas and strawberries are great. These are hearty, with a lovely nutty taste.
