Peanut Butter and Banana Oatmeal
This is a breakfast variation Esther created while cooking in her dorm this Winter. I was leery at first, but it tastes surprisingly good!
Make Old-fashioned Quaker Oats as directed, using soy milk in place of the water. When cooked, add a large spoonful of natural peanut butter, and stir to combine. Sprinkle with brown sugar and top with sliced bananas.
Mom’s variation on Esther’s creation: Put raisins on top also, and chopped walnuts or peanuts, and then omit the sugar.
