Lactose free Chocolate Chip Cookies

These are really excellent cookies, with good texture;they freeze well, so you can pull out as many as you need at a time. The recipe comes from Taste of Home’ s Healthy Cooking Magazine.

1 cup maple syrup
3/4 cup sugar
1/2 cup oil
1/2 cup unsweetened applesauce
3 1/2 tsp. vanilla
3/4 tsp. molasses
3 cups flour
3 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
1 pkge. (10 oz) dairy free semisweet chocolate chips

In a large bowl beat the syrup, sugar, oil, applesauce, vanilla, and molasses till well blended. Combine the dry ingredients and gradually add to the syrup mixture. Mix well. Stir in chocolate chips. Cover and refrigerate for an hour.

Drop by heaping tablespoonfuls 2 inches apart onto baking sheets lightly coated with cooking spray or parchment paper. Bake at 350 degrees for 10-12 minutes or till edges are lightly browned. Remove to wire racks.
Makes 3 1/2 dozen.

**Dairy free chocolate chips can be found in many bulk food stores and health food stores. The ones I get are made by Enjoy Life.
