Spicy Nuts

These nuts are so good!  I keep a jar in my own fridge for snacking, and they are a “safe” snack that is gluten free, lactose free, and is a helpful source of protein when it’s hard to get good meat.

2 1/2 c. dry roasted peanuts (or any nuts– check label to make sure they are gluten free, as ingredients are often added during dry roasting!)

1 Tbsp. olive oil

2 tsp. chili powder

2 tsp. ground cumin

2 tsp. sugar

1 tsp. curry powder

1 tsp. garlic powder

1/4 tsp. cayenne pepper

Preheat oven to 300 degrees.  Heat olive oil in heavy skillet.  Add spices and stir till fragrant, about 30 seconds.  Add nuts and stir till coated, about 2 minutes.  Transfer to large, rimmed baking sheet.  Bake until golden brown and almost dry, stirring occasionally, about 15 minutes.  Season with salt if desired.  Cool and store in airtight container.
