Really Good Hummus

15 oz. can cannellini, great white northern beans, or chick peas (rinsed and drained)

1 Tbsp. fresh lemon juice

1 large garlic clove, chopped

1/2 tsp. ground cumin

1/4 tsp. dried oregano

dash cayenne pepper

olive oil, salt and pepper

Put first six ingredients in processor with 1 Tbsp. of the oil, and begin to blend.  Depending on the kind of beans you use you will need to add more oil gradually, till mixture is silky smooth.  (If you are trying to keep it low-calorie, use some of the bean liquor or water.)  Season with salt and pepper to taste, and add more cayenne if you like the heat.  This keeps well in the fridge and tastes better as it sits!  Really good with the homemade tortilla chips.
