Summer Corn Salsa
1 tomato, diced
2 c. frozen corn kernels
1 c. black beans
3 Tbsp. lime juice (half a lime)
1 small vidalia onion (or a red one, for color), chopped
1/2 c. cilantro, chopped
1 Tbsp. ground cumin
1 tsp. chili powder
salt and pepper to taste
Toss together in bowl and serve with lots of homemade tortilla chips. This is so good and colorful for a summer snack!
